Avocado & Feta Quesadilla

Enjoy this south-of-the-border snack, which is light on grease and heavy on flavour.

Ingredients

1 corn tortilla

1/8 avocado

60g feta cheese

20g rocket or salad greens

salt and pepper, to taste

 

Method

1 Preheat sandwich press or non-stick frying pan. 

2 Add avocado, crumbled cheese and rocket to half of the tortilla and season. Fold in half to toast in press or in frypan, until golden.
