Baked Beans & Tomatoes with Fried Eggs

Vegetarian, Gluten Free, Dairy Free, Nut Free

Ingredients:

1 tsp olive oil

¼ red onion, sliced

½ garlic clove, finely chopped

1 tomatoes, chopped

200g (½)tin butter beans, rinsed

salt & pepper, to taste

2 large eggs

1 tbs chopped parsley

Method:

1 Heat oil in a non-stick frypan over medium heat and cook onion and garlic until softened.

2 Add tomato and beans and continue to cook, stirring, for a few minutes. Season with salt and pepper.

3 Push beans to one side and crack eggs into pan. Reduce heat to medium-low and cook covered for 2-3 minutes, or until eggs are cooked to your liking.

4 Remove from heat, sprinkle with parsley and cracked black pepper and serve with toast.
