Banana & Almond Overnight Oats

Vegetarian, Egg Free

Ingredients:

1 tbs rolled oats

60ml almond milk

20g flaked almonds

1/4 cup cottage cheese

1/2 banana, thinly sliced

1/4 tsp almond extract

2 tsp shredded coconut

Method:

1 Place oats and 100ml almond milk in a small jar and refrigerate overnight.

2 Toast almonds in a fry pan for a few minutes until golden and set aside.

3 In the morning blitz cottage cheese, 1/2 banana, 1 tbs almond milk and almond extract until smooth.

4 To serve, top oats with cottage cheese, remaining banana, toasted almonds and coconut.
