Banana & Ricotta Hotcakes

Vegetarian, Gluten Free, Nut Free

Ingredients:

1 cup ricotta cheese

2 large eggs

3 tbs plain flour (or gluten-free if required)

1 tsp vanilla extract

1 banana, sliced

2 tsp honey

Method:

1 Blend cheese, eggs, flour and vanilla until smooth.

2 Heat a non-stick frypan over moderate heat and cook 2 tablespoons of mixture per pancake, for 1-2 minutes or until golden, flip and cook the other side.

3 Divide between two plates, top with sliced banana and drizzle with honey.
