Carrot, Bean, Hummus & Rocket Wrap

Ingredients

2 tbs hummus

150g cottage cheese

2 x 45g wholegrain (or gluten-free) pita wraps

125g tin four bean mix, drained & rinsed

1 medium carrot, grated

1 cup rocket leaves

salt & pepper, to taste

 

Method

1 Spread hummus and cheese on wraps and top with beans, carrots and rocket.

2 Season, roll up and cut in half to serve.
