Cherry Tomato Omelette

Quick, healthy and easy.

Ingredients

2 tsp olive oil

2 eggs

6 cherry tomatoes

1 spring onion, finely sliced

salt & pepper, to taste

1 tbs tasty cheese, grated

Method

1 In a small bowl, whisk the eggs together with the spring onion, salt, pepper and grated cheese.

2 Heat oil in a non-stick frying pan over medium heat.  Add tomatoes and saute for a minute until soft but holding their shape. Pour in eggs mixture and cook until just set. Serve in wrap.
