Chilli, Lime & Avo Breakfast Smash

Ingredients

2 large eggs

1/4 avocado

1/2 lime, juiced

1 slices wholegrain (or gluten-free) bread, toasted

1 tsp finely chopped red onion

1/2 small red chilli, chopped

1 sprigs parsley, leaves picked

salt & pepper, to taste

Method

1 Heat a non stick frypan over medium heat and cook eggs to your liking.

2 Meanwhile, smash avocado and lime juice. 

3 Spread smashed avocado on toast, top with eggs, onion, chilli and parsley. Season with salt and pepper to serve.
