Frittata with Zucchini & Mushrooms

A frittata that’s perfect for breakfast, lunch or dinner. Serve it with your favourite salad.

Ingredients

olive oil spray

1 garlic clove, finely chopped

1 zucchini, thinly sliced

200g button mushrooms, thinly sliced

4 eggs

1 tbs fresh parsley

1 tbs fresh mint

salt & pepper, to taste

50g feta, crumbled

 

Method

1 Heat a small frying pan over medium heat and spray with oil. Saute garlic, zucchini and mushrooms for a few minutes until softened.

2 In a small bowl, whisk together eggs, parsley, mint, salt and pepper, then pour mixture into pan. Top with feta and cook for a few minutes until set. 

3 Remove from heat and serve with a salad.
