Orange & Kiwi Fruit Chia Pudding

Ingredients

1 orange, half cut in segments

1 kiwi fruit, half sliced

3 tbs chia seeds

60g vanilla protein powder

1/2 cup Greek yoghurt

1 tbs coconut flakes

 

Method

1 Place quinoa and 1 cup water in a saucepan and bring to the boil. Simmer, covered for 15 minutes or until cooked, rest covered for 5 minutes.  Fluff with a fork and transfer to a tray to cool.

2 Meanwhile, puree remaining half of orange and kiwi fruit and stir through 3 ½ tbs chia seeds, protein powder, yoghurt and 3/4 cup water. Chill for 10 minutes.

3 Heat a small frypan over low heat and toast coconut until golden.

4 To serve, stir cooled quinoa through chia, divide between two jars or glasses, top with slices of orange and kiwi fruit and scatter over coconut and remaining chia seeds.
