Summer Berry Overnight Oats

Ingredients

20g slivered almonds

1/2 cup cottage cheese

1/2 cup milk

1/2 cup Greek yoghurt

1 tsp vanilla extract

1/4 tsp ground cinnamon

1/2 cup rolled oats (if gluten-free, use brown rice or quinoa flakes)

1/2 cup fresh strawberries, cut in half

1/2 cup fresh blueberries

1/4 bunch mint, small leaves picked

 

Method

1 Heat a small frypan over medium heat and toast almonds till golden. Set aside.

2 Blend cheese, milk, yoghurt, vanilla and cinnamon until smooth and stir through oats and almonds. Divide between two jars and refrigerate overnight.

3 To serve toss berries together, divide between jars and top with mint.
