Vegetarian Breakfast Lunch Dinner Pizza

One of our most popular pizzas – gone veg!

Ingredients

2 wholegrain pita wraps (gluten-free if needed)

2 tbs tomato paste

Handful baby spinach leaves

60g mozzarella cheese, grated

50g button mushrooms, sliced

1 tsp dried Italian herbs

2 tbs sundried tomatoes

2 eggs

1 tbs parmesan cheese, grated, to serve

Method

1 Preheat oven to 230°C. Spread wraps/pita breads with tomato paste, scatter over spinach leaves and mushrooms, sprinkle with mozzarella and sundried tomatoes.

2 Crack egg into the centre of each pizza and sprinkle with herbs. Bake for 10 minutes or until egg has cooked. Sprinkle with parmesan over hot pizza just before serving.
